What are premium smoking chips?

Smoking chips are small pieces of hardwood used to add extra flavour during barbecuing. Once the chips start to smoulder, aromatic smoke is created. This smoke slowly penetrates meat, fish, or vegetables, providing the characteristic barbecue smoke flavour.

The principle is simple: heat causes the wood to smoulder, releasing aromas. These aromas cling to the surface of your dish, building flavour layer by layer during cooking.

Therefore, the quality of the wood plays a major role. Poor or damp smoking wood can produce a sharp, bitter smoke that spoils the taste of your dish. Good wood chips are always clean, untreated, and well-dried.

How to use smoking wood on your BBQ?

Using smoking wood is simple, but the way you apply it differs per type of smoking wood.

Using smoking chunks

Smoking chunks are larger pieces of wood that smolder slowly and release smoke for a long time. They are therefore ideal for kamados and charcoal barbecues.

Use smoking chunks as follows:

  1. Place 1 to 2 chunks between or on top of the glowing coals.
  2. Close the BBQ so that the smoke can spread well.
  3. Let the chunks smolder slowly while your dish cooks.

Due to their size, chunks release smoke for a long time, making them perfect for low & slow preparations such as ribs, brisket, or pulled pork.

Using wood chips

Wood chips are smaller and produce smoke faster. Therefore, we advise against placing chips directly in the heat, but always to use them in a smoking accessory.

Use wood chips as follows:

  1. Fill a smoker box or smoker tube with wood chips.
  2. Briefly light the chips so they start to smolder.
  3. Place the smoker box or smoker tube in the BBQ and close the lid.

This way, a controlled smoke development is created, and you prevent the chips from burning immediately.

Tip for the best smoke development

Always use a small amount of smoking wood and add more later if necessary. This way, you prevent the smoke from becoming too intense and maintain a nice, balanced smoky flavor.

Which wood chips suit your BBQ?

Not every type of wood produces the same smoke. Some types of wood give a soft, fruity flavor, while others add more power and depth.

Fruit trees such as apple wood chips and cherry wood chips are known for their mild, slightly sweet smoke. These types of wood pair perfectly with chicken, fish, and pork because they support the natural flavor of the dish without overpowering it.
